University of Tennessee Graduate School(1) of Medicine professor and researcher Alan Solomon, M.D., director of the Human Immunology(2) and Cancer/Alzheimer's Disease(3) and Amyloid(4)-Related Disorders(5) Research Program, led a team that discovered a link between foie gras(6) prepared from goose or duck liver(7) and the type of amyloid found in rheumatoid arthritis(8) or tuberculosis(9).
Their experimental data(10), appearing in this week's edition(11) of the Proceedings of the National Academy of Sciences(12), has provided the first evidence that a food product can hasten(13) amyloid development.
Amyloidosis(14) is a disease process(15) involving the deposit(16) of normal or mutated proteins(17) that have become misfolded(18). In this unstable state(19), such proteins form hair-like fibers(20), or fibrils(21), that are deposited into(22) vital organs(23) like the heart, kidneys, liver, pancreas(24) and brain. This process leads to organ failure(25) and, eventually(26), death. There are many types of amyloid-related diseases in addition to(27) rheumatoid arthritis, such as Alzheimer's disease, adult-onset (type-2) diabetes(28) and an illness related to multiple myeloma(29) called primary(30) or AL(31) amyloidosis, an illness that has been a particular focus of study in the Solomon laboratory(32).
Foie gras is a culinary delicacy(33) derived from(34) massively(35) enlarged(36) fatty livers(37) of ducks and geese. It is produced by gorging(38) the fowl(39) over several weeks. Solomon and his research team analyzed commercially sold foie gras from the U.S. and France and found that it contained a type of amyloid called AA(40). Amyloid deposits are commonly found in waterfowl(41), but this condition is noticeably(42) increased in force-fed(43) birds. In their study, mice prone to(44) develop AA amyloidosis were injected(45) or fed amyloid extracted from(46) foie gras. Within eight weeks, a majority of the animals developed extensive(47) amyloid deposits in the liver, spleen(48), intestine(49) and other organs.
